Freezer Meals! Easy Healthy Lunch & Dinner Recipes – Mind Over Munch

Howdy muncher pals, I know you guys love meal
prep and I get requests all the time for slow cooker meals and dinner meals
so I am super excited to share these three freezer meals with you. All three of
these meals are super easy to make. I am showing you 2 slow cooker meals which
are Vegan or have Vegan options and one meatloaf and all of them you can
prepare in advance freeze and then you just throw them in the slow cooker or
the oven whenever you’re ready. Thumbs up for convenience with healthy
eating. It can be done. First let’s start with my sweet potato lentil curry. My personal
favorite. For this freezer meal you will need sweet potato, lentils, onion, carrots,
coconut milk, canned tomatoes, curry powder and salt. Place a bag into a large mixing bowl
and simply add in all your ingredients except your coconut milk. Seal it up, label it,
and transfer to the freezer. When you’re ready to make your curry remove from the freezer the night
before and allow it to thaw in the refrigerator overnight. In the morning
empty your ingredients into your slow cooker, add your coconut milk, and let it
cook. Then come dinner time you’ll have a delicious curry, hot and ready to enjoy. Yum.
Next let’s make my freezer chili. For this freezer meal you will need black beans and
white beans, ground turkey or for Vegan you could use additional beans of your choice, onion, bell pepper, celery, tomato sauce,
vegetable broth, diced tomatoes, garlic, chili powder, cocoa powder my secret
chili ingredient, cumin, garlic powder, paprika, cinnamon, salt and pep, and cayenne. Yes quite a few ingredients as is usually the case with a chill but really no work at all
for so much flavor. Once again you can place a bag into a large mixing bowl
and add in all of your ingredients except your vegetable broth. Seal it up nice and
tight and don’t forget to label it. When you’re ready to make it you can
remove from the freezer the night before and allow it to thaw in the refrigerator
overnight. In the morning simply dump your chili bag into your slow cooker, add your
vegetable broth, and let it cook. Perfect easy peasy and ready to eat. Last we’re going to make
my freezer meatloaf. For this freezer meal you will need ground turkey, an egg, oats,
onion, green onion, tomato sauce, bell pepper, garlic, wurst-s-sher..worchestershire..what is it? salt, pepper, onion powder, garlic powder,
and sage. Add all of your ingredients into a bowl and mix well. Don’t be afraid to use
your hands to dig in. Line a loaf pan with foil and fill it with you meatloaf mixture. Fold your foil to covered completely and transfer it to the freezer. Once frozen I like to remove the loaf from the pan so
I still have access to my pan until whenever I’m ready to eat the loaf. Thumbs up for hacks. Transfer to a freezer bag and don’t
forget to label it. When you’re ready to make it transfer back to your loaf pan and
allow to thaw in the refrigerator overnight. The next day open it up and
brush on your meatloaf glaze which is just ketchup, honey, and worcestershire. Bake in an oven preheated at 375 degrees Fahrenheit for about an hour. Then there’s nothing left
to do but enjoy. So yummy. I hope you guys enjoy these freezer meals. Don’t forget

  5. I am sharing this dilemma with everyone ! So… A family opened a kiosk like shop of home made sauses( tomato, peper, plums, pomegranate …) some have a hint of sugar added but since no one eats ( I assume ) bowls of sauses it ' fine!there are so good! I'm addicted!but know we have to spend e few month in anather city( we live in between two cities )and no more sauses for me:( I am actually considering wrighting them a business plan and promising to help to promote their product in order to convince them to open a hole chain of their shops so that that were ever I go my sauses will always be there with me! :)))

  8. Hi there, this may be a little silly, but for the chili recipe what is the measurements for the beans? It says 1 can but the can size I have for beans are 540mls, which kind of seems like a lot. Should I put maybe say 1 cup or each black and white beans? Your advice is greatly appreciated!!

  10. This meatloaf is SO good. I just made some today and took a bite before I serve it to my family. The flavors all go so well together and that glaze on the top is just the right amount of sweetness to tie everything together. This is a keeper…but then again…all your recipes are 🙂

  12. Great video again love them. Is it best to freeze it uncooked like that or can you cook enough for say 6 portions and freeze them? Because I cook 1 lot of say my spicy turkey meatballs which is enough for 6 portions then freeze them is it better to freeze before cooking or?

  24. I made the Meatloaf and pulled it out of the oven excited to eat and noticed that there was a thick weird layer of pink "fat" on top of the meatloaf. doesn't look appealing at all. any suggestions?

  27. in the video for the coconut curry. you didn't add any water but I thought it says too in the recipe. my son cooked this today and tasted great but it was dark brown. I'm assuming that because I used green lentils instead of red. I will make this again and maybe decrease cook time. Thanks Alyssia

  29. fun fact: my country was once a British colony and to this day we still call worcestershire sauce by the company that makes it. so we just say "Lea and Perrins" and everyone know what you means.

  30. compltly wrong to freez food that way what is the to frez it that way if you didn't cook it yet even it make it harder to cook it later when it is frozen you better cook it first and  reheat it when you need it this is the way otherwas I like your show and effert

  33. Its Wuss-stir-sheer.
    Why do americans find this so difficult?! Not trying to be mean, I just don't see what about this exact word confuses people – there are many, many more difficult names, places and words in the english language!

    Worcester is the town, like most uk county towns, and because we're lazy, the "chester" suffix is contracted to "ster" – and because british english is non-rhotic and lazy, we drop the hard "r" sound off the end of words, and let vowels on weak syllables become a sort of lazy "uh" sound. So Worcestershire becomes Wuh-ster-shuh or, as it's easier to envisage that in terms of known words, "Wuss – stir – sheer"
