Vanilla -Butterscotch Ice Cream -Celebrating 100th Episode 😍🙏🏻

Hi All , Welcome to my 100th video. We are all here for this special occasion 100th episode is a vanilla butterscotch ice cream It is all because of you all i am here. Thank you so much for supporting me Main inspiration is my Husband Jan Joshi Then my main support is my sons, my Dad and Mom and Jan’s Dad and Mom. My Best friend Anu and Anupama supported me a lot to start this youtube channel So lets get to make the ice cream First we are make a Praline.This is just an added recipe as it is the 100th video. This is totally optional Praline is caramelizing some sugar and adding some cashew nuts into it. Take non stick deep bottomed pan and add 4 tbsp of sugar Add 4-5 tbsp of water to the sugar Dont put a spoon just rotate the pan as it is. The bubbles will start coming and then the sugar will start becoming golden brown It should not get burnt be next to the sugar caramelization as it tend to burn fast By Adding water we get the caramel faster you can notice the color change i have taken 10 cashewnuts .Dry roasted them before adding it to the caramel.Broken cashew is best for this Parline you can see the color change this the color you need to get . If we do more than this , it might get burnt Add the cashews now turn off the heat Mix well Remove from the burner the cashews should be evenly coated Remove this to a baking sheet when it cools down you will get a caramel brittle.when it is fully cold we can break it down with our hands and whisk it in the grinder Now lets make the butterscotch syrup We need to first caramelize 1 cup of sugar again we can store this sauce. We can use it as a topping for pancakes or icecreams etc add some water to the sugar for faster caramelization repeat the caramel procedure. you can see the sugar has caramelized well turn off the flame Add 50 gm butter to this hot caramel stir it continuously .Remove it from the hot burner Now we need to add the 1/2 cup of cream and stir continuously else it will get crystallized the smell is amazing. you will get a toffee smell in your kitchen add 1 tsp of vannila essence to this the butterscotch sauce is ready. If you want you can add some salt to this and we get the salted butterscotch. Allow it cool before removing it to the bottle you can crush the caramel brittle as it would have cooled down now you can also use a rolling pin to crush it or whisk it in the grinder this is the praline powder. if you want to bite the cashew you can grind it little less Now take a wide deep glass or steel bowl for whisking your whipping cream. You need to keep this bowl and the beater blades in the freezer for half an hour.This will help to whip the whipping cream faster Tip:- if you want to make the ice cream fast and you dont have time to keep the bowl in the freezer for 1/2 an hour then you can keep the whipping cream in the freezer for 10 mins and then you can whip it I have used Almarai Whipping Cream (500 ml). **This is Not sponsored by Almarai ** you can also use heavy cream or thick cream or double cream according to the availability It is the fat content that is different in these creams if the fat content is 36+ it is heavy cream Fat content 30 to 35 is whipping cream We need a cream that we can whip that is the summary. you can also keep a bowl of ice cubes with water under the bowl that we are going to whip in .The demo is shown in my mango ice cream video We can also dream whip powder for making this ice cream Add 500 ml of whipping cream first whip in low speed then when the foam comes change it to medium speed you can see the consistency it is almost done After reaching this consistency do not increase the speed to know whether your cream is whipped properly , if the cream does not fall down from the blades then it is the right consistency Do not beat it further than this point it will churn To take the cream on the blades just ON the beater by keeping it above the whipped cream . Do not insert the beater blades fully .Be careful the blades should be just above the whipped cream and switch it on . The cream from the blades will fall into the whipped cream. Now we need to add the condensed milk if you do not like condensed milk add the powdered sugar to this if you are adding powdered sugar add it initially along with the whipping cream(that is before beating the whipping cream) Add vanilla essence I am using 1 tin of condensed milk .You can vary according to your taste preference The sugar should actually be a little more now as the sweetness will reduce when the cream is frozen Mixing should be done by a spatula and only gentle folding we cannot whip the whipping cream in a mixer Hand beater is easy and convenient. you can also whip it with our hands using a steel whisk. add a pinch of salt to this Taste it now, for the sweetness level this is the step for making vanilla ice cream. Praline and Butterscotch are just additional flavours. if you mix the butterscotch sauce with this vanilla cream you will get butterscotch ice cream you can choose the combination according to your preference I am adding some praline powder to this cream before freezing it Now we can layer the whipped cream and butterscotch syrup into a mould . First pour in the vanilla cream the sauce mix it a bit then again the vanilla cream and repeat the process Repeat the process till you fill the container/mould Before keeping it in the freezer for setting cover it with a cling paper and close the lid. This will avoid the ice crystal formation Keep it in the freezer for 6 hours After 6 hours you can get perfect ice cream without any ice crystals Always before scooping keep it out for 5 mins Decorate your vanilla ice cream with Praline and butterscotch syrup Enjoy the ice cream Hope u liked the video ..take care s..see u soon 🙂
