[music] It’s the Christmas season, and today you’re
in for a treat because I’m gonna show you three super easy, insanely delicious plant
based recipes for a spectacular vegan Christmas dinner.  We’re gonna make a Savory Chickpea Walnut
Apple Loaf, a delicious ginger sesame asparagus and Spiced Cranberry Mango Sauce–simply divine!
Plus, a bonus vegan holiday dessert for my sweet potato and truffle lovers, you def want

Chickpea Walnut Apple Loaf. [music] To begin, let’s preheat our oven to 400 degrees.
Line a baking sheet with parchment paper, and add your cooked chickpeas. Place them
in the oven for 10-15 minutes, to dry and to avoid a mushy loaf. While your chickpeas
are baking, chop an onion, garlic, celery, green apple, and walnuts.  To a pot on medium heat, add a little bit
of oil or water, and all of your chopped ingredients, along with a little bit of salt. Sauté for
4-5 minutes stirring frequently until your veggies are translucent.  [music] It’s now time to take the chickpeas out
of the oven. Set them aside for later.  Next, add your oatmeal to a food processor
and pulse until coarsely ground. Pour these oats into a bowl and set them aside.  Now, add the baked chickpeas to the food processor,
along with half of your sautéed veggie mix, coconut aminos, fresh cilantro and thyme,
sage, oregano, fennel, cumin, chipotle seasoning, cayenne pepper, and salt. Process until your
mixture is half mashed and half coarsely chunky.  Pour your loaf mix into a large mixing bowl.  We’ll now prepare the flax egg by adding
ground flaxseed and water to a bowl. Mix and set this aside. Now let’s make our sauce. To a bowl, add
ketchup, molasses, maple syrup, apple sauce, and lemon. We’ll use this delicious sauce
as our glaze, and some of it moisten the inside of our loaf.  And now back to our mixing bowl. Add the rest
of your sautéed veggies, coarsely ground oats, half of the sauce, and your flax egg. [music] Mix everything together until it resembles
a veggie burger mix. If it’s too wet, add more oats. And it’s too dry, add a bit more
coconut aminos and a splash of water. Taste and adjust seasonings as needed.  Finally, transfer the mix to a parchment-lined
loaf pan. Make sure your parchment paper is slightly hanging over the sides so it’s
easy to remove the loaf after it’s baked. Press the mix into your loaf pan, and even
it out. Top it off with the rest of your yummy sauce
for a nice, sweet glaze.  [music] Let’s bake our loaf for about 45 minutes
or until a toothpick stuck to the center of the loaf comes out clean. Legumes are an easy way for you to  pack
tons of protein in. Chickpeas are one of my favorites because they’re loaded with protein,
fiber and tons of vitamins and minerals. Just 1 cup of cooked chickpeas has about 15 grams
of protein. So that’s about ⅓ of the recommended daily intake for women, and about ¼ for men. The walnuts in this recipe also give you a
protein boost, along with a healthy dose of omega 3, which can fight depression, improve
eye health, reduce high blood pressure and tons more.  It’s been about 45 minutes, and our vegan
Christmas loaf looks so scrumptious. Our toothpick has has also come out clean.  After your loaf is baked, cool it down for
about 15 minutes, and then remove it from your loaf pan and parchment paper. Make sure
your loaf is cooled down before slicing.  This vegan Christmas recipe is an excellent
entree for a delicious vegan Christmas dinner and packs over 65 grams of protein onto your
table.  [music] Our next dish is an old favorite of mine.
Sesame ginger asparagus. It’s sweet and savory with just the right pop of heat. Super
quick and makes the perfect vegan christmas side dish.  To begin, wash your  asparagus and trim about
an inch off the ends. Mince some garlic and grate fresh ginger.  Add a little bit of oil or water to a skillet
on medium heat, and then add minced garlic, sesame seeds, and grated ginger, and let them
cook for about one minute while stirring frequently.  Next we’re gonna add asparagus, getting
them to cover the entire pan as much as possible.   Then, add coconut aminos and maple syrup,
a dash of cayenne and a pinch of salt. Cook this for about 4-5 minutes, stirring
frequently until the asparagus is tender, but crisp. Remove the skillet from heat, drizzle on some
sesame oil and mix in.  Serve your asparagus with a garnish sesame
seeds. This asparagus adds a gourmet touch to your vegan christmas dinner spread, packing
in tons of good-for-you vitamins and minerals. [music] And now for our third dish–spiced cranberry
mango sauce. Don’t you just love a nice cranberry sauce on your holiday spread? Well
think of the classic cranberry sauce with a blend of sweet mango and warm spices, this
is definitely gonna take your cranberry sauce up another level.   First, add a cup of water to a saucepan on
medium heat, along with star anise, clove, and cinnamon.  You’re going to bring this to a boil for
about 5 minutes. In the meantime, blend your mango chunks.  After your spices have boiled, add your washed
cranberries, mango puree, maple syrup, and lemon zest.  Bring to a simmer, and then lower heat and
stir occasionally until your mixture has thickened. [music] You can also take the back of your spoon and
press the cranberries until you’ve reached your desired consistency.  Cranberries are such a gorgeous side dish
to a vegan christmas dinner spread and they have tons of antioxidants, improve your digestion,
and boost your immune system. Definitely a win-win vegan christmas recipe.
  And now for dessert, because every Christmas
dinner needs a yummy dessert, you have to try these luscious sweet potato carob holiday
truffles. Guys this is on fire! These truffles combine sweet potato, dates, and carob for
their base, rolled in shredded coconut and pistachios. Simply delicious. And super easy.
Kids will especially enjoy making these. Also, if you don’t want caffeine, but still want
that chocolatey taste, carob is a delicious alternative.  Alright! Now I get to dig into this yummy
food. I’m gonna start off with the loaf. Umm. Ummm. That was, that was amazing! I taste the fennel. Uh. Humm. A little bit of the cayenne. The loaf with the cranberry sauce…absolutely
perfect! This is what I would want it to taste like.
It’s so full of flavor. I can taste the spices. And now I’m gonna combine those flavors
in my mouth with this asparagus… Umm. Humm.. Anyone at your dinner table would be happy
